This tastes like a pesto you would find in an Italian local farmers market on a warm spring day, spread over a fresh ciabatta sandwich with all the fresh veggies in between. Meaning- IT IS OUT OF THIS WORLD. I accidentally discovered this when I was making my "meat" substitute for my Vegan Shepherds Pie. Spread it over a fresh slice of bread, add it to a pasta dish, over a protein, or a toasted crostini you can't go wrong. Did I mention I am part Sicilian? So this just makes sense.

Ingredients:
2 cups walnuts
1 jar sun dried tomatoes (drained, or about 1 cup)
Directions:
Place walnuts and sun dried tomatoes in food processor and blend until it forms a paste/pesto
*optional; add garlic for more flavor, red chili flakes for spice, oil from sun dried tomato jar if an oiler consistency is preferred
