Buttercream Cashew Frosting

The most delicious frosting!!! Made with all-natural whole food ingredients-the perfect fall donut or cupcake frosting! I made apple spiced donuts and topped them with this frosting-they were a total hit.


Prep time: 60 minutes

Cook time: 5 minutes

Total time: 10 minutes


Serves: 12 cupcakes or donuts


Ingredients:

1 1/2 raw unsalted cashews soaked

5 tbsp coconut oil melted

6 tbsp maple syrup

1 1/2 tsp almond extract

1 tbsp lemon

1 tbsp coconut flour

6 tbsp nut milk for blending


Steps:

  1. Soak cashews overnight or for 1 hour in boiling hot water

  2. Once cashews are soaked, blend all ingredients together. Start with 2-4 tbsp of nut milk and add more as needed.

  3. Frost your cupcakes or donuts.

Notes* this frosting stores well in the fridge-if storing in the fridge before frosting throw it in the microwave for 15 seconds to soften for an easier spread. Spray a rubber baking spatula with avocado oil for an easier spread.
