Gluten-free, and so much healthier than your standard choco chip cookie recipe from Nestle Tollhouse (sorry Nestle, I love you but these are the first choice now). I even added shredded coconut and nuts for extra chewiness, trust me they are amazing.

Cook time: 10-12 minutes
Total time: 20 ish minutes
Ingredients:
2 tbsp butter (sub vegan butter if you need)
1 egg (sub flax egg if vegan)
1/2 cup brown sugar (or coconut sugar for a healthier alternative)
1/4 cup almond butter or nut butter of choice
1 tsp vanilla extract
2 cups almond flour
1/2 tsp baking soda
1/4 tsp salt
1/4 cup semi-sweet chocolate chips
1/4 cup shredded coconut
1/4 cup chopped nuts of choice (I used a blend of peanuts, pecans, almonds)
Directions:
Preheat oven to 350 and line baking sheet with parchment paper
With a hand mixer or in a mixing bowl mix; butter, egg, sugar, almond butter, and vanilla.
Next add in the baking soda and salt, mix.
Then add the almond flour and mix well.
Mix in the coconut, nuts, and chocolate chips.
Place dough in 12 cookies with a spoon, flatten the cookies with a spatula.
Bake for 10-12 minutes
