Pumpkin Bliss Balls

These soft and doughy paleo-approved pumpkin bliss balls are the perfect mid-day snack, or pre-workout quick fix, or after-dinner dessert. They are gluten-free, refined sugar-free, and vegan. They are fun to coat in whatever your heart desires. I used coconut flakes, sunflower seeds, cacao/pumpkin spice mix, and oats. They are quick and easy-no baking required. I made them as cute takeaways for a Fall into Wellness Soiree I threw. Enjoy! :)

Total Time: 15 minutes


Ingredients:

1 cup Medjool dates

1/2 cup sunflower seeds

1/2 cup pumpkin purée

1/2 cup unsweetened coconut

1/4 cup almond butter

1/8 cup maple syrup

2 tsp vanilla extract

1/4 tsp pumpkin spice

1/8 tsp salt


Steps:

  1. In a food processor, combine all ingredients and blend until smooth. It should be like a cookie dough consistency.

  2. Once the ingredients are all blended together, form 1 inch balls. I used a mini cookie dough scooper and it worked great!

  3. Cover in whatever coating you like! Some suggestions; chopped nuts, coconut, oats, cacao, hemp hearts, or seeds.

  4. Put in the freezer for a minimum of 30 minutes. Best stored in the freezer or fridge up to a week.
