Curry Lentil Burgers (Vegan, GF, dairy free)

Have I mentioned I love curry? These curry lentil burgers are so easy to whip together and nutrient dense with a big source of protein and fiber. Serve with a lettuce wrap or hamburger bun. Sweet potato fries not optional ;)



Ingredients:

1 onion

1 stalk celery

1 cup mushrooms

1 tbsp curry powder

1/2 tbsp chili

1⁄2 tsp garlic powder

1⁄4 cup chopped walnuts

1 cup finely chopped kale

2 cups lentil cooked

3⁄4 cup gluten free breadcrumbs or regular bread crumbs

1 jalapeno


Directions:

Preheat oven to 400 and lightly grease baking sheet

Chop mushrooms, celery, onion and sauté until translucent. Add the curry, garlic and chili powder. Add salt/pepper to taste. Stir in chopped walnuts and kale. Let cool off a bit.

Mix together lentils, jalapeno and sautéed mixture. Add breadcrumbs and mix thoroughly-the lentils should deconstruct and it will look mushy-like ground beef ;)

Form patties by scooping half a cup or just use your hands to make balls and mold into patties.

Bake for 15-20 minutes or until slightly crisp/browned
