This creamy puree of nutrient-dense veggies needs to be next on your to-make list! It was so easy to whip up, tastes like creamy mashed potatoes but with a slight sweetness from the sweet potato, and pairs perfectly with anything that you would make with mashed potatoes. Like this vegan sheperds pie recipe I posted a while back! Using cauliflower and sweet potato instead of regular potatoes opts for a lighter alternative to your traditional mashed potatoes.

Cook time: 25 minutes
Total: 30 minutes
Serves: 6
Ingredients:
2 large sweet potatoes chopped
1 lb of chopped cauliflower
tbsp fresh garlic
1tsp salt
1 tbsp ghee (this is great for gut health)
add 1/4 cup parmesan (optional)
Steps
Steam the sweet potatoes and cauliflower together until soft enough to smash with a form
Put steamed veg in a food processor or blender with the rest of the ingredients
Puree until the mash is creamy smooth, scrape the sides to make sure all ingredients are being blended
serve warm and garnish with fresh herbs
